Chesapeake oysters

Raw, roasted or fried, from Maryland and Virginia waters.

What it is

Oysters from the Chesapeake Bay are milder and less salty than many ocean oysters. Raw bars serve them on the half shell, and many places also fry or roast them.

How to eat it

  • Ask where the oysters are from; raw bars often have several kinds.
  • Farmed oysters mean good oysters all year.

The story

Oysters were once the Chesapeake’s biggest catch. Aquaculture has brought local oysters back to menus.

Local tip: Try a local oyster next to one from another coast to taste the difference.

Where to try it

Checked as operating in October 2026.
