What it is

Top round is grilled whole over charcoal until charred outside and rare to medium inside, then sliced very thin onto a kaiser roll. Raw onion and "tiger sauce", a mix of horseradish and mayonnaise, are the classic toppings.

How to eat it

  • Ask for it rare, medium or well done.
  • Pit ham and pit turkey are also common.
  • Most stands are counter service with outdoor tables.

The story

Pit beef stands have lined the roads of east Baltimore, especially Pulaski Highway, for decades.

Local tip: Add both horseradish and onion for the local way.

Where to try it

Checked as operating in October 2026.
