What it is

Beef marinated for days in vinegar and spices, then braised and served in a sweet-sour gravy thickened with gingersnaps, with potato dumplings.

How to eat it

  • Look for church and community sour beef dinners in the fall.
  • Some German-heritage restaurants serve it in season.

The story

Brought by the city’s large German community, it is Baltimore’s version of sauerbraten.

Local tip: Fall church suppers are the most traditional place to try it.
